Fuel Your Muscles with These Delicious Fall Recipes

Once the fall weather hits, people can expect to see pumpkin spice flavored everything rolling out in grocery stores and coffee shops. From the traditional pumpkin spice latte to pumpkin spice Oreos, it is hard to not be tempted by this delightful treat. Instead of hitting up your local coffee shop for a fall pick-me-up, try one of these awesome fall inspired soup recipes recommended by our personal training experts instead!

These simple and tasty stew ideas are perfect for packing plenty of flavor and the protein necessary for keeping your body ready for your next workout. Whether you're a vegetarian or meat eater, you'll love the way these fall inspired recipes give you the fuel you need to hit up one of our awesome fitness classes. 

Vegetable Soup

What You'll Need: 

  • 2 tbsp. olive oil
  • 1/2 cup diced carrots
  • 3 stalks celery, diced
  • 2 medium onions, diced
  • 6 garlic cloves, minced 
  • 4 cups chopped zucchini
  • 1 cup eggplant, peeled and chopped
  • 1 cup low-sodium vegetable broth
  • 28 oz can no-salt-added whole tomatoes, undrained
  • 10 oz package fresh spinach, chopped
  • 16 oz can cannellini (white kidney) beans, drained and rinsed
  • 2 tsp. dried parsley
  • 1 tsp. dried thyme
  • 1 tsp. dried rosemary
  • Salt and black pepper, to taste

Cooking Directions:  In a large saucepan, heat oil over medium-high heat. Add carrots, celery, onions and garlic, cooking the mixture until the onions are translucent. Next, add zucchini and eggplant. Cook mixture for five to seven minutes. Add broth and continue to cook for another five minutes. Next, add tomatoes and juice, spinach and beans. Bring mixture to a boil, then simmer for 10 minutes. Season to taste.

Irish Stew

What You'll Need: 

  • 3/4 pound boneless leg of lamb, trimmed of excess fat and cut into 3/4-inch cubes
  • 3/4 pound Yukon gold potatoes, cut into 3/4-inch cubes
  • 6 cups water
  • 2 cups fat-free, low-sodium beef or vegetable broth
  • 3 carrots, peeled and diced
  • 2 leeks, sliced
  • 2 parsnips, sliced
  • 2 cups shredded cabbage 
  • 1 large onion, diced
  • 1 bay leaf
  • 1 tsp. dried thyme
  • 1/2 tsp. salt
  • 1/4 cup parsley, chopped

Directions: In a saucepan or Dutch oven, combine all ingredients, reserving the parsley as a garnish. Cover and bring to a boil over high heat. Reduce heat to medium-low, partially cover pot and simmer for 45 minutes. Uncover pot and continue cooking, stirring occasionally, for 45 minutes, or until lamb is tender. Remove bay leaf and garnish with parsley.
